This is really easy and so quick to make. I have used this receipe loads and added other things to it such as coco powder, cherries, walnuts, coconut and oats and all have turned out really well. It can be made as a loaf and cut into slices or in paper cases for individual cakes.
3 very ripe bananas
1tsp baking powder
2oz melted marg / spread / butter. I use goats butter to keep it dairy free for us.
6oz self raising flour
Mash the sugar and bananas together in a large bowl.
Add the melted butter or marg and stir in.
Add the flour and baking powder and mix well.
Add any other ingredients and stir in. If adding additional dry ingredients such as coco powder or oats either add a little less of the flour or add a splash of milk to keep the mixture sticky. Soya milk and goats milk are ok to use too.
Pour into either a loaf or cake tin or individual paper cases.
Bake in pre heated oven on 180 for about 20mins depending on wether doing a loaf or muffins as the muffins cook a little quicker. Check by sticking a clean knife or skewer into the cake and it should come out clean when done.
Bananas freeze well for this recipe so if I have any bananas which go too ripe and are not going to be eaten I freeze them to keep for this recipe.
The cooked cake or muffins freeze really well too.
